3/4 cup melted coconut oil
3/4 cup brown or coconut sugar
1 cup old-fashioned oats
1 cup oat flour (can use store bought or make your own by blending oats in blender or food processor)
1 Tablespoon vanilla extract
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/3 cup tahini
1/3 cup maple syrup
1/3 cup canned full-fat coconut milk
pinch of salt
1 cup or bag of vegan chocolate chips or chunks (Enjoy Life or Simple Truth brands are good options).

Preheat oven to 350 Degree F.

Melt coconut oil in medium bowl, add sugar and whisk until combined.

Add in oat flour and old-fashioned oats, vanilla, salt, baking soda, baking powder and mix well.

Take half of  the mixer and press onto a parchment lined 8×8, 9×9 or 8×11 baking pan (pan size will determine the thickness of the bars) and bake for 10 min.

While crust layer is baking make caramel sauce.

Using a hand held or standing mixer mix together tahini, maple syrup, coconut milk and pinch of salt.

After crust is done baking pour an even layer of chocolate chips/chunks onto crust then pour an even layer of caramel sauce over the chocolate chips.

Top with the remaining oat mixture and put back in over and bake for 18-20 mins.

Let cool then place in fridge to chill, for best results allow to chill for 24 hours.
