Quinoa salad

Ingredients

1 c uncooked quinoa

2 c water

1-2 can chickpeas, drained and rinsed

1 medium cucumber, chopped

1 medium red bell pepper, chopped

¾ c red onion, chopped

1 c parsley, chopped

¼ c oil

¼ c lemon juice

1 T red wine vinegar

2 cloves garlic

½ t salt and pepper to taste

Instructions

  1. Cook quinoa- combine quinoa and water, bring to boil, then decrease heat to a simmer. Cook until quinoa has absorbed all the water. Remove from heat, let sit for 5 minutes and fluff with fork.
  2. In large serving bowl, combine chickpeas, cucumber, bell pepper, onion, and parsley. Set aside.
  3. In small bowl, whisk together oil, lemon juice, vinegar, garlic, and salt. Set aside.
  4. Once quinoa is mostly cool, add to serving bowl, then drizzle the dressing on top. Combine and add black pepper to taste. Let salad rest 5-10 minutes before serving.
