Ingredients

4 cups water

1-1/2 c lentils

Coconut curry sauce

1 T coconut oil or water

1 small shallot

4 cloves garlic

1-2 T minced ginger

¾ t salt

1 heaping T curry powder

1 t ground turmeric

1-1/2 c canned coconut milk

2 T lemon juice

Instructions

  1. Cook lentil according to package directions
  2. In the meantime, heat large rimmed skillet over medium heat. Once hot, add oil or water, shallot, garlic and ginger. Sauté for 2-3 minutes, stirring frequently. Then add salt, curry, turmeric and cook for 1 minute more. Lower heat to low.
  3. Add coconut milk and stir to combine. Cook over low heat for 3-4 minutes to combine flavors.
  4. Add well drained, cooked lentils to coconut sauce and stir. Season more to taste.
  5. Turn off heat, add lemon juice, stir. Serve over rice.
