Ingredients

2 T avocado oil

½ diced onion

3 cloves garlic

½ red or orange pepper

1-1/2 t cumin

1 t chili powder

1-1/2 c salsa

4 c vegetable stock

2- 15 oz cans black beans

1-2 c corn

Instructions

  1. Cook oil, garlic, onion, pepper, and a pinch of salt and pepper for 4-5 minutes.
  2. Add cumin and chili powder, stir to coat. Add salsa and vegetable stock. Stir to combine, increase heat to medium and bring to a low boil.
  3. Add black beans and corn. Reduce heat to low, cover, and simmer for 30 minutes.
  4. Serve with cilantro, avocado, tortilla chips.
