Quinoa salad

Ingredients
1 c uncooked quinoa
2 c water
1-2 can chickpeas, drained and rinsed
1 medium cucumber, chopped
1 medium red bell pepper, chopped
¾ c red onion, chopped
1 c parsley, chopped
¼ c oil
¼ c lemon juice
1 T red wine vinegar
2 cloves garlic
½ t salt and pepper to taste
Instructions
- Cook quinoa- combine quinoa and water, bring to boil, then decrease heat to a simmer. Cook until quinoa has absorbed all the water. Remove from heat, let sit for 5 minutes and fluff with fork.
- In large serving bowl, combine chickpeas, cucumber, bell pepper, onion, and parsley. Set aside.
- In small bowl, whisk together oil, lemon juice, vinegar, garlic, and salt. Set aside.
- Once quinoa is mostly cool, add to serving bowl, then drizzle the dressing on top. Combine and add black pepper to taste. Let salad rest 5-10 minutes before serving.
