Ingredients
4 cups water
1-1/2 c lentils
Coconut curry sauce
1 T coconut oil or water
1 small shallot
4 cloves garlic
1-2 T minced ginger
¾ t salt
1 heaping T curry powder
1 t ground turmeric
1-1/2 c canned coconut milk
2 T lemon juice
Instructions
- Cook lentil according to package directions
- In the meantime, heat large rimmed skillet over medium heat. Once hot, add oil or water, shallot, garlic and ginger. Sauté for 2-3 minutes, stirring frequently. Then add salt, curry, turmeric and cook for 1 minute more. Lower heat to low.
- Add coconut milk and stir to combine. Cook over low heat for 3-4 minutes to combine flavors.
- Add well drained, cooked lentils to coconut sauce and stir. Season more to taste.
- Turn off heat, add lemon juice, stir. Serve over rice.
