2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 Tablespoons Sugar
1 cup canned coconut milk (full fat)
Heat oven to 425 Degrees F
Mix flour, baking powder, salt and sugar then add coconut milk.
Stir with a fork until it is mostly combined then dump onto parchment paper and lightly kneed dough by folding the corners the dough with the parchment paper, (the dough will be a bit sticky).
Onces folded over and looks well combined, form into a circle and pat the top to flatten down a little bit.
Cut the dough into eight pie like pieces with a greased knife or pizza cutter and lightly sprinkle dough with sugar.
Place in the oven on a cookie sheet and leave dough on parchment paper.
Cook for 18 min.
This is the basic recipe, you can add nuts, dried fruit, sub. 1/4 cup a flour for coco powder, and can drizzle with whatever glaze you want!
PLEASE NOTE, you will need the full 1 cup of coconut milk to make this recipe, if you decide to make two batches with one can of coconut you will need to add a little substitute to get a full 2 cups from one can. I use whatever I have on hand, such as almond milk, coconut milk etc.
